Ingredients:
- 3 lbs Swanson Family Farm grass-finished beef chuck roast
- 2 tbsp olive oil
- Salt and black pepper (to taste)
- 1 large onion, chopped
- 4 carrots, cut into chunks
- 4 medium potatoes, quartered
- 3 garlic cloves, minced
- 2 cups beef broth
- 1 cup red wine (optional)
- 2 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 tsp rosemary
Instructions:
- Prepare the Roast: Pat the beef chuck roast dry with paper towels. Season generously with salt and pepper on all sides.
- Sear the Meat: Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 4 minutes per side. Transfer to a slow cooker.
- Add Vegetables: Place the chopped onion, carrots, and potatoes around the roast in the slow cooker.
- Create the Sauce: In a small bowl, mix beef broth, red wine (if using), Worcestershire sauce, garlic, thyme, and rosemary. Pour this mixture over the roast and vegetables.
- Cook: Cover and cook on low for 8–10 hours, or until the beef is fork-tender.
