Classic Southern Comfort: Beef Pot Roast with Vegetables

There’s nothing quite like a slow-cooked beef pot roast to bring the family together around the dinner table. This classic Southern recipe combines tender, pasture-raised beef with hearty vegetables and rich flavors for the ultimate comfort food. At Swanson Family Farm, our grass-finished beef elevates this timeless dish, offering superior flavor and texture.

Ingredients:

  • 3 lbs Swanson Family Farm grass-finished beef chuck roast
  • 2 tbsp olive oil
  • Salt and black pepper (to taste)
  • 1 large onion, chopped
  • 4 carrots, cut into chunks
  • 4 medium potatoes, quartered
  • 3 garlic cloves, minced
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp rosemary

Instructions:

  1. Prepare the Roast: Pat the beef chuck roast dry with paper towels. Season generously with salt and pepper on all sides.
  2. Sear the Meat: Heat olive oil in a large skillet over medium-high heat. Sear the roast on all sides until browned, about 4 minutes per side. Transfer to a slow cooker.
  3. Add Vegetables: Place the chopped onion, carrots, and potatoes around the roast in the slow cooker.
  4. Create the Sauce: In a small bowl, mix beef broth, red wine (if using), Worcestershire sauce, garlic, thyme, and rosemary. Pour this mixture over the roast and vegetables.
  5. Cook: Cover and cook on low for 8–10 hours, or until the beef is fork-tender.
  6. Serve: Remove the roast and vegetables from the slow cooker. Use the juices to make a quick gravy, or serve as is. Enjoy with warm biscuits or cornbread for a truly Southern experience.
